Herb Roasted Vegetables

Product: Blue Kettle Herb Vinaigrette

Ingredients

Use a combination of the following fresh vegetables to equal 9 cups:
- Carrots, chopped

- Yellow, orange and/or red bell peppers, sliced
- Mushrooms, sliced
- Red and/or yellow onion, sliced
- Celery, chopped
- Zucchini, sliced
- Red and/or yellow potatoes, quartered
- Brocolli
- 1 cup Blue Kettle Herb Vinaigrette
- Salt
- Pepper


Directions
- Combine all vegetable (9 cups) in a 9" x 13" roasting pan
- Pour 1 cup of Blue Kettle Herb Vinaigrette over vegetables and mix
- Season with salt and pepper
- Place in 350° oven or on the barbecue and cook for approximately 20 minutes or until fork tender
